Probably the best vegan oil-free mayonnaise I know

2/3 cups or approx. 100 g raw unsalted cashews
1 tsp lemon juice
3-4 tsp pomegranate syrup
2/3 tsp sea salt
1 medjoul date or 1 tbsp date syrup
1/2 tsp onion powder
1/2 cup or 120 ml water

There are a few recipes for oil-free mayonnaises – one I posted under my older blog posts, they’re good too – but it always lacked that certain something. That changed for me with this recipe. Our family loves it and thinks it’s awesome. Give it a try – it’s really worth it.

For this recipe you will need a high-powered blender or you will need to soak the cashews in water overnight (drain the soaking water before blending).

Add all ingredients to a highspeed-powerblender and blend well until smooth – and it’s ready to go.
